Quick & Easy Shrimp Ceviche

It sure doesn’t feel like fall yet, which is why we’re sharing a super fresh, delicious, and easy ceviche recipe. Using cooked shrimp, creamy avocado, and tangy lime, this is a modern-day hack to the traditional Peruvian appetizer. Ole!

Prep time: 15 minutes
Cook time: none!

Ingredients:

1/2 pound (8 ounces) cooked shrimp—make sure it’s sustainably sourced!
3 Persian style cucumbers
2 avocados
1/2 tomato
1/2 jalapeño
1/4 medium red onion
1/4 bunch cilantro
Juice of 1.5 lime
Salt and freshly cracked pepper to taste
Blue corn tortilla chips, for serving

Directions:

  1. Cut the shrimp, cucumbers, avocados, and tomato into small cubes.
  2. Finely chop jalapeño, red onion, and cilantro
  3. Combine the above ingredients together gently along with lime juice
  4. Refrigerate for one hour prior to serving to allow the flavors to marry; serve with tortilla chips & enjoy 🙂
