It sure doesn’t feel like fall yet, which is why we’re sharing a super fresh, delicious, and easy ceviche recipe. Using cooked shrimp, creamy avocado, and tangy lime, this is a modern-day hack to the traditional Peruvian appetizer. Ole!
Prep time: 15 minutes
Cook time: none!
Ingredients:
1/2 pound (8 ounces) cooked shrimp—make sure it’s sustainably sourced!
3 Persian style cucumbers
2 avocados
1/2 tomato
1/2 jalapeño
1/4 medium red onion
1/4 bunch cilantro
Juice of 1.5 lime
Salt and freshly cracked pepper to taste
Blue corn tortilla chips, for serving
Directions:
- Cut the shrimp, cucumbers, avocados, and tomato into small cubes.
- Finely chop jalapeño, red onion, and cilantro
- Combine the above ingredients together gently along with lime juice
- Refrigerate for one hour prior to serving to allow the flavors to marry; serve with tortilla chips & enjoy 🙂
