A lovely combination of grilled-to-perfection chicken (with a kick!), crunchy greens and veggies paired with a creamy cilantro-lime avocado dressing. This salad is a lovely compliment to any summer meal or can be enjoyed all on its own. Sahtein!
Ingredients:
Salad
1/2 head iceberg lettuce, chopped
1/4 head cabbage, chopped
2 Persian cucumbers, chopped
2 roma or on-the-vine tomatoes
Grilled Chicken
1 pound free range chicken breast tenders
1/2 teaspoon cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon low-sodium mediterranean poultry blend
1 tablespoon olive oil
sea salt & pepper, to taste
Dressing
1/2 ripe avocado
3/4 cup fresh cilantro, chopped
1/2 cup regular or greek yogurt
1/4 shallot, chopped
1/2 clove garlic, chopped
1 tablespoon lime juice
1/4 teaspoon salt
Directions:
- Add salad ingredients together.
- Combine spices & olive oil along with chicken breast and allow to marinate for at least 15 minutes. Grill for 6 minutes on each side. Allow to cool & then cut into 1-inch pieces.
- Add all dressing ingredients to food processor and pulse for 30 seconds until smooth.
- Combine salad ingredients, grilled chicken & dressing together.
