Who could’ve imagined guilt-free, delicious pudding that’s actually great for you? Cholesterol-lowering oats & almonds are combined with chia seeds, milk & yogurt—sounds like a superfood party to us! Chia seeds are a wonderful source of fiber, plant-based protein, omega-3 fatty acids, and several minerals. The chia & oats plump up when left overnight, resulting in a creamy, delicious surprise topped with antioxidant rich berries in every bite. It can be prepped in just five minutes, with the best part being that your breakfast is ready to go the next morning! Prep several of these at once to have breakfast or a lovely dessert ready to go for the whole week 😉
Prep time: 5 minutes
Wait time: 1 hr-overnight
Ingredients:
½ cup yogurt (you can use any kind—we’re obsessed with Noosa’s honey or vanilla)
1 cup milk (also any kind—we use an almond-coconut milk blend)
1.5 teaspoons honey or maple syrup (optional—we’d recommend opting out if you’re already using a sweetened yogurt)
¾ teaspoon vanilla
¼ c. rolled oats (not steel cut for this one)
3 tablespoons chia seeds
3 tablespoons sliced almonds
¼ teaspoon cinnamon (optional)
½ cup mixed berries for topping (strawberries, blueberries, raspberries)
Mason jar (or any jar with a lid)
Directions:
Add milk, yogurt, vanilla, and honey to jar and stir with a spoon to combine. Add dry ingredients—oats, chia seeds, sliced almonds, and cinnamon and place lid on jar. Shake well to combine. Set aside for at least 1 hour or leave overnight for best results. Top with berries just before chomping away.
And sahtein–or deux healths!
